MFTS Degree Program Description
A joint
effort between the Animal and Dairy Sciences
and Poultry Science Departments, this degree is a non-thesis,
industry-track Master of Agriculture in Muscle Food Technology and Safety
(MFTS). The program will emphasize all
species (including poultry and aquatic species) and disciplines (including the
Nutrition and Food Science and
Fisheries and Allied Aquaculture Departments) related to the muscle foods
area. Not unlike current MBA programs
offered at various universities, this program is designed to be a 5th year
program for students who want more education to prepare them for a career in
the muscle foods industry, but who are not necessarily research oriented. It could also serve those currently in the
muscle foods industry who need to be brought up to date on the latest in
technology and information and are looking to climb the corporate ladder. Areas of emphasis for the MFTS degree
include Food Safety/HACCP, Meat, Poultry, and Fish Processing, Muscle Biology,
and Food Chemistry. The MFTS degree
program requires 30 graduate hours of course work and a 3 to 6 month
internship. The internship will be
problem-based and will be focused on current technology in the muscle foods
industry. The MFTS program will operate
under the current Master of Agriculture Degree program in the Animal &
Dairy Sciences and Poultry Science Departments, and will be overseen by a
separate advisory committee. Ideally,
students will work at least 5 hours per week at the poultry unit and the
Lambert Meat Laboratory to supplement their course work with hands-on
supervised experience. The result is
that companies needing highly qualified, experienced, and knowledgeable
employees will have a great pool of students to select from. By their involvement in the internship part
of the program, companies even have the opportunity to begin training future
employees.
