Research Program:

Muscle fiber type and metabolism effects on pork quality and sensory properties in pigs selected for leanness and muscling. Mechanisms affecting muscle fiber type distribution and metabolism. Antemortem factors affecting beef tenderness. Economic differences between implanting versus not implanting steers during growing and finishing phases.
